- Sweet potato (sweeter varieties like Anno Imo or Beni Haruka) 200g (peeled)
- Chocolate (at least 85% cacao, for the filling) 10g
- 2 tsp (about 10g) grass-fed butter or ghee (unsalted)
- 1 teaspoon (about 5g) MCT oil (or coconut oil)
- 1/4 teaspoon cinnamon
- A pinch of allspice (or nutmeg)
- Coating chocolate (at least 85% cacao) 70-80g
- Toppings: Cinnamon, a pinch of coarse salt (sea salt or rock salt), and cocoa powder or chopped nuts (optional)
Instructions
- Preparing the sweet potato: Peel and cut into bite-sized pieces. Place them in a pot, add just enough water to cover them, and put the lid on. Once it comes to a boil, lower the heat and simmer for 15-20 minutes. Alternatively, steaming them in a steamer or rice cooker is a fantastic way to lock in their natural sweetness. They are ready when a bamboo skewer slides through easily.
- Evaporate the moisture: Turn off the heat and let it sit for 1-2 minutes, allowing the residual heat to evaporate any remaining moisture in the pot. Once the steam settles, mash it until smooth with a masher or fork while it's still hot (passing it through a sieve will make it even smoother!).
- Making the filling: In a small saucepan, combine 10g of the filling chocolate and the butter. Gently melt them together over low heat (or just use the residual heat) while stirring slowly. - Roll into balls: Using a spoon or a small ice cream scoop, take about 15g of the chilled mash and roll it into a ball with your hands. If the mixture starts sticking, simply wet your hands or cool them with cold water before shaping—this will help you form them perfectly!
- Melt the coating chocolate: Bring water to a boil in a shallow pot, then turn off the heat. Place the finely chopped chocolate in a heatproof bowl and melt it over the water bath (be careful not to let it get too hot).
- Coating: Using a regular fork or a chocolate dipping fork, dip the truffles into the chocolate. Gently tap off any excess chocolate and place them on a parchment-lined baking sheet. Before the chocolate coating sets, sprinkle the tops with cinnamon or coarse salt.
- Finishing and storage: Chill in the fridge for about 15 minutes until the coating sets, and you're all done! You can store them in the fridge for 4 to 5 days, or in the freezer for about 2 weeks (just let them thaw at room temperature before eating).
