This is a refreshing granita based on coconut milk, combined with the aroma of lemon and fresh basil. It's perfect when you want a light dessert on a hot day, as a palate cleanser after a meal, or for vegetarians and those avoiding dairy. We actually made it and were surprised by how refreshing the basil aroma was. If you keep the sweetness subtle, it's suitable for adults, and if you make it sweeter, children will also love it.Ingredients (Serves 4)
- Coconut milk (canned) 1 can (400ml, full-fat or light)
- Fresh basil 1 cup (approx. 20g)
- Lemon juice 3 tbsp (from approx. 1 lemon)
- Maple syrup 1-2 tbsp (adjust to taste)
- Sea salt a pinch
- For garnish: Fresh basil, lemon zest (optional)
Instructions
- Wash fresh basil thoroughly, remove stems, and chop roughly.
- In a blender, combine coconut milk, basil, lemon juice, maple syrup, and sea salt. Blend until smooth. For a creamier texture, strain once.
- Transfer to a container, cover the surface directly with plastic wrap or a lid, and place in the freezer. For the first 2 hours as it begins to solidify, stir the surface with a fork or spoon every 30-40 minutes to break up ice crystals and incorporate air.
- Continue to chill until completely frozen (at least 6 hours total). Before serving, let it sit at room temperature for about 10 minutes to soften slightly, then scoop and serve.
- Garnish with basil leaves or lemon zest as desired. Enjoy the refreshing aroma.
