Ingredients (Serves 2–3)

  • 100g Moroheiya (leaves only)
  • Bone broth (or chicken stock) 3 cups (approx. 720ml)
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons grass-fed butter or ghee
  • Sea salt to taste (guideline: 1/4 to 1/2 tsp)
  • 1 teaspoon lemon juice (optional), a pinch of black pepper, 1/2 block silken tofu
  • Please be aware that the sticky texture of Molokhia can sometimes cause itching. We recommend having some vinegar water or running water ready to handle it just in case.

How to make

  1. For the Moroheiya, we remove the thick stems and use only the leaves. We quickly blanch them in plenty of boiling water with a pinch of salt for about 30 seconds, then immediately cool them in cold water and drain well (you can also use them raw without boiling if you prefer).
  2. Place the Moroheiya, which has been lightly drained, on a cutting board and finely chop it with a knife. If you prefer a smoother texture, we recommend using a blender to blend it.
  3. Place the bone broth in a pot and warm it up, then add the coriander, cumin powder, and chopped Moroheiya and simmer on low heat for about 10 minutes. We are careful not to simmer it for too long, as the color and nutrients can be lost.
  4. Heat some butter or ghee in a small frying pan and add the cumin seeds. Sauté them until they become fragrant, being careful not to let them burn by keeping the heat between low and medium.
  5. We add the sautéed cumin seeds along with the butter into the pot to lock in the aroma, then season with salt. Finish by adding lemon juice or black pepper to your liking, and it is ready to enjoy.
  6. (Optional) We also recommend adding silken tofu and warming it through, or blending it until smooth for a creamy potage-style variation.
  7. If your hands start to feel itchy while you are preparing Moroheiya, applying some vinegar water and then washing them thoroughly under running water can help soothe the irritation.
