About This Recipe
The "Berry Bowl" introduced by our geefee team is a simple recipe centered around low-carb berries, lightly tossed with raw honey and lemon. It's great as a light post-meal dessert or a morning fruit bowl, and its refreshing taste is perfect for when you're feeling tired. When we actually made it, it was more refreshing than expected and cleared our heads in the morning, making it highly recommended for busy days.Ingredients (Serves 2-3)
- Raspberries 1/2 cup (approx. 60g)
- Blueberries 1/2 cup (approx. 60g)
- Blackberries 1/2 cup (approx. 60g)
- Strawberries 1 cup (approx. 100g) *hulled and quartered
- Freshly squeezed lemon juice from 1/2 lemon (approx. 1.5 tbsp)
- Raw honey 1 tbsp (adjust to taste)
- Fresh oregano (or mint) 5-10g (chopped for topping)
- Yogurt or granola to taste (optional, for topping)
Instructions
- Hull the strawberries and cut them into bite-sized pieces, such as quarters.
- In a small bowl, combine the lemon juice and honey, and mix lightly to dissolve the honey (it's fine if it doesn't dissolve completely).
- Place all the berries and strawberries in a bowl, pour the lemon and honey mixture over them, and toss gently. It's also delicious if you lightly crush them into a sauce-like consistency.
- Cover with plastic wrap and chill in the refrigerator for about 30 minutes to let the flavors meld.
- Serve in bowls and sprinkle with chopped fresh oregano (or mint). It's also delicious served with yogurt or granola.
Nutrition & Health Benefits
Berries are rich in polyphenols like anthocyanins, vitamin C, and dietary fiber, offering expected antioxidant and anti-inflammatory effects. Raw honey provides natural sweetness along with trace amounts of vitamins, minerals, and antibacterial components, but please do not give it to infants under 1 year old. Fortifying with vitamin C from lemon juice and keeping the sweetness moderate helps prevent rapid spikes in blood sugar levels. By keeping the sweetness low, the calories are also kept down, making it perfect for snacks or breakfast.Tips for Variations
- Swap the honey for maple syrup or agave syrup to make it vegan-friendly.
- Herbs like mint or basil also pair well. Grating a little lemon zest will enhance the aroma.
- If you lightly crush some of the berries into a sauce, you can use it as a topping for pancakes or yogurt.
- Using frozen berries gives it a sherbet-like texture, and they are also convenient as smoothie ingredients.
- Adding nuts or seeds will provide extra texture and healthy fats.
