We (geefee team) wanted to combine satisfying protein with a substantial base, so we used cauliflower rice with grass-fed ground beef. When we tried it, the crisp texture of the cauliflower paired perfectly with the spicy taco meat, and it was fully satisfying as a rice alternative. You can adjust the heat and herbs to taste, so it’s easy to adapt for kids or adults.
Ingredients (serves 2-3)
- Cauliflower 1/2 (approx. 200g)
- Grass-fed ground beef 250g
- Red onion 1/2 (minced)
- Red bell pepper 1/2 (cut into 1cm cubes)
- Cilantro (stems) 1 bunch (stems minced, leaves for garnish)
- Sea salt a pinch
- Olive oil teaspoon 1〜2
- Taco seasoning tablespoon 1 1/2 (see below)
- Garnish: avocado 1/2, tomato 1/2, lime 1/4
Instructions
- Break the cauliflower into florets and pulse in a food processor until coarsely chopped (or finely mince with a knife). If it’s very wet, press lightly with kitchen paper to prevent sogginess.
- Mince the red onion, cut the bell pepper into 1cm cubes, and finely chop the cilantro stems.
- Heat olive oil in a frying pan over medium heat, sprinkle sea salt over the red onion and bell pepper, and sauté 1–2 minutes until the onion becomes translucent.
- Push the vegetables to one side of the pan, add the ground beef to the empty side, and cook thoroughly until no pink remains. Mix with the vegetables.
- Add the taco seasoning and let it release its aroma, then add the cauliflower rice and stir everything together (cook about 1–3 minutes so the cauliflower doesn’t become too soft).
- Stir in the chopped cilantro stems, turn off the heat, and adjust seasoning with salt to taste.
- Serve on plates and top with diced tomato, avocado, and cilantro leaves. Finish by squeezing lime over the top.
