This salad combines the delicate aroma of smoked salmon with a refreshing caper dressing. It"s quick to prep are yet visually stunning, making it perfect for entertaining or weekend brunches. We recommend sockeye salmon (close to wild-caught) from the North Pacific for its rich flavor. We"ve made it ourselves and found it to be simple yet highly satisfying, making us want to repeat it many times.Ingredients (for 2 servings)
- Smoked Salmon 10 slices (approx. 80g)
- Baby leaf, dill, Italian parsley, and other herbs appropriate amount (approx. 30g total)
- Capers 1 teas poon (approx. 10g) *rinse quickly with water to remove salt
- Lemon juice 2 teaspoons (approx. 10ml)
- Apple cider vinegar 2 teaspoons (approx. 10ml)
- Extra virgin olive oil 2 teaspoons (approx. 10ml)
- MCT oil (or coconut oil) 2 teaspoons (approx. 10ml)
- Sea salt a pinch to a small amount (adjust to taste)
- Coarsely ground black pepper a small amount (to taste)
- (Optional) 1/2 avocado, sliced cucumber or cherry tomatoes, appropriate am ount of each
Instructions
- Rinse the capers lightly with water to remove saltiness, then finely chop them. If using avocado, peel and slice thinly, then sprinkle with a little lemon juice to prevent discoloration.
- In a bowl, combine lemon juice and apple cider vinegar, then gradually add olive oil and MCT oil while emulsifying well. Add capers, and season with sea salt and black pepper. Let it sit for a few minutes for the flavors to meld.
- Arra nge baby leaves and herbs on a plate, then place smoked salmon on top. If adding avocado or cucumber, arrange them colorfully.
- Drizzle the prepared dressing over the entire salad, and finish by scattering dill or Italian parsley. Serving with bread or rye crackers is also recommended.
