Instructions
- Make the avocado oil mayonnaise. In a bowl, combine the egg yolk, lemon juice, apple cider vinegar, and salt, then mix well with a hand blender or whisk. *If using raw eggs, we recommend using fresh or pasteurized eggs.
- Gradually add the oils (avocado oil and MCT oil) while emulsifying thoroughly. Start by adding a few drops at a time, and once the emulsion is stable, slowly pour in the rest. When the mixture turns whitish and thick, taste and adjust with salt, then chill in the refrigerator.
