Ingredients (serves about 4)

  • Sweet Potato Chicken Balls
    • ground chicken 250g
    • sweet potato (grated) about 1 cup (one medium)
    • green onions (thinly sliced) 2 tbsp
    • coconut oil (or olive oil) 1–2 tbsp
    • ginger powder 1 tsp (or 1 tsp grated fresh ginger)
    • paprika powder 1 tsp
    • salt 1 tsp (adjust to taste)
    • black pepper a pinch
  • Zucchini Chicken Balls
    • ground chicken 250g
    • zucchini (grated) about 1 cup (one medium)
    • green onions (thinly sliced) 2 tbsp
    • cilantro (roughly chopped) 2 tbsp (substitute Italian parsley if you don't like cilantro)
    • garlic powder 1 tsp
    • cumin powder 1/2 tsp
    • salt 1 tsp (adjust to taste)
    • black pepper a little

    • avocado 1 (ripe)
    • lime 1/2 (juice and zest)
    • orange juice 2 tbsp (or other citrus juice)
    • salt a pinch, olive oil 1 tsp (optional)

  1. Prep: Grate the sweet potato and zucchini using a box grater or grater. Because zucchini is very moist, a key tip to avoid failure is to squeeze out the excess liquid thoroughly with a dish towel or paper towels.

  4. Bake: Preheat the oven to 200°C. Line a baking sheet with parchment paper, arrange the balls, and bake for about 15–20 minutes (until the center reaches 75°C). Or, to pan-fry, heat a little oil over medium heat and cook 5–7 minutes per side until both sides are nicely browned and cooked through.
  5. Make the dip: Mash the avocado in a bowl with a fork, then mix in lime juice and zest, orange juice, salt, and olive oil. Taste and adjust the salt, and sprinkle cilantro for garnish.
  6. To serve: Arrange the cooked meatballs on a plate and serve with the dip. They can be cooled and stored in an airtight container for meal prep.
