- Parsley (minced) 1/2 cup (approx. 30g)
- Turmeric 1/2 tsp
- Cumin (powder) 1/2 tsp
- Ginger powder 1/2 tsp (or grated ginger 1 tsp)
- Sea salt 1/2 tsp (adjust to taste)
- Garlic (grated) 1 clove (optional)
- Onion (minced) 1/4 (if you want it moist)
- Olive oil 1 tsp (for grilling)
- Tomato, lemon (for garnish/accompaniment, optional)
- Bamboo skewers 2-3 (soak in water for about 30 minutes before use)
Instructions
- Preheat oven to 250°C. Adjust between 220°C and 250°C depending on your oven's heat source. If using a grill or frying pan, preheat to medium-high heat.
- In a bowl, combine ground lamb, minced parsley, turmeric, cumin, ginger powder, salt, garlic, and onion. Knead well until sticky to blend the flavors. Avoid over-kneading, as it can make the mixture tough; stop once it becomes sticky.
- Divide the kneaded mixture into 3-4 portions, shape each into an oval, and thread onto bamboo skewers. Adjust the shape to an even thickness. Resting them in the refrigerator for about 10 minutes will help them hold their shape better.
- Wrap aluminum foil around the handle end of the bamboo skewers for easier handling. Line a baking sheet with parchment paper, lightly brush with olive oil, and arrange the skewers.
- Bake in the oven for about 15-20 minutes. Flip them once halfway through to ensure even cooking. They are safe to eat when the internal temperature reaches approximately 71°C (160°F). If grilling, cook each side for 4-6 minutes; if pan-frying, cook over medium heat until both sides are nicely browned.
- Once cooked, let them rest for a few minutes, then serve with tomatoes and lemon. They are refreshing and easy to eat when paired with yogurt sauce or a salad.
