About This Recipe

This coriander‑lime butter is a handy thing to keep in the freezer. When we at geefee tried making it, we found that even though it’s just mixed together, it instantly brightened up dishes — it was a big hit on morning toast and with fish for dinner. It’s perfect for anyone who loves a fresh, zesty aroma, wants an easy way to change up flavors, or wants to cut back on seasonings and let the natural goodness of ingredients shine.

Ingredients (about 8-10 servings)

  • Grass-fed butter (unsalted) 200g (brought to room temperature)
  • Finely chopped coriander (cilantro) 1/2 cup (about 30-40g)
  • Lime zest (grated) 2 tbsp (organic/pesticide-free recommended)
  • Lime juice 2-3 tbsp (adjust to taste)
  • Sea salt or rock salt 1/2 tsp (adjust to taste)
  • Cayenne pepper (optional) 1 /4 tsp

Instructions

  1. Soften the butter at room temperature (until it yields slightly when pressed with your finger).
  2. Remove the tough stems from the coriander and chop finely. Wash the lime well, grate the zest, and squeeze the juice (we recommend using an organic or pesticide-free lime for the zest).
  3. Place the butter, coriander, lime zest, lime juice, salt, and cayenne in a food processor and pulse briefly until smooth. You can also easily mix it by hand in a bowl using a rubber spatula!
  4. Taste and adjust with salt or lime juice. If it needs a bit more of a refreshing kick, add a little extra lime juice.
  5. Lay out a piece of plastic wrap, place the mixed butter in the center, shape it into a log, and wrap it tightly. Twist the ends to seal it up.
  6. Chill in the refrigerator for about 1 hour to set (if you're in a hurry, pop it in the freezer for 15-20 minutes). It will keep for 5-7 days in the fridge, or abou t 2 months in the freezer. Just be sure to check the aroma and color before using.

Nutrition & Health Benefits

Coriander contains vitamin K, vitamin A, and antioxidant compounds, while lime is rich in vitamin C. Grass-fed butter is said to have more vitamin K2 and conjugated linoleic acid (CLA) than regular butter, and its flavor means a small amount can be satisfying. Because butter is energy-dense, aiming for about 10 g per use is a good guideline to enjoy it in balance. Be mindful of salt intake and reduce salt as needed.

Tips for Variations

  • Add 1 grated clove of garlic to create a delicious garlic citrus butter.
  • If you're not a fan of cilantro, swapping it out for Italian parsley or chives will still give you a beautifully refreshing flavor.
  • If you want to add a little heat, toss in some chopped red chili peppers or chili flakes.
  • Melting a dollop over foil-baked fish or grilled chicken really brings out the flavors. We also highly recommend it on toast, grilled corn, or boiled potatoes.
  • If you portion it out and freeze it, you can conveniently slice off exactly what you need for your meals.
