- A delightful chilled sweet with an exquisite combination of coconut and cacao
- Enjoy guilt-free with no white sugar
- Easy recipe! Just chill in the refrigerator to set
Here's a recipe for a delightfully chilled coconut chocolate, perfect for the warmer seasons. This guilt-free sweet uses no white sugar, with the natural sweetness of coconut and the subtle bitterness of cacao creating an exquisite match. Since it only requires chilling in the refrigerator to set, even beginners in confectionery can easily give it a try. It's also recommended as a treat for yourself or a small gift.
This recipe is recommended for:
- Those who want to reduce white sugar intake
- Those looking for gluten-free sweets
- Those who want to easily make delicious snacks
- Those who want to adjust the sweetness themselves
When we (the geefee team) actually made it, we found that the natural sweetness of coconut and the slight bitterness of cacao paired better than we expected, and we were very satisfied. Since it only needs to be chilled in the refrigerator, it can be easily prepared for busy mornings or as a snack.
Ingredients (for 8-10 pieces)
- Coconut butter …… 4 tbsp (approx. 60g)
- Cacao powder (unsweetened) …… 2 tbsp (approx. 12-16g)
- Cacao butter …… 2 tbsp (approx. 30g) *If unavailable, you can add extra coconut oil
- Coconut oil (extra virgin) …… 1 tbsp (approx. 12g)
- Oligosaccharide (or erythritol/xylitol) …… 1 tbsp (adjust to taste)
- Sea salt …… a pinch
- Fresh fruits (blueberries, raspberries, pineapple, etc.) …… appropriate amount
- Coconut flakes (for finishing) …… a little
- Mint (for garnish, if available) …… as needed
Instructions
- Wash and thoroughly dry the fruits, then cut them into easy-to-eat pieces. Prepare molds (silicone molds or ice cube trays, etc.).
- In a bowl, combine coconut butter, cacao butter, coconut oil, cacao powder, oligosaccharide, and sea salt. Melt slowly in a double boiler, stirring until smooth. Stir carefully over low heat to prevent burning.
- Taste and adjust the sweetness. If it's not sweet enough, add small amounts and mix well. If using erythritol, etc., it may be difficult to dissolve, so dissolve it thoroughly while slightly warm.
- Pour the melted chocolate into the molds with a spoon or spout. Gently tap the mold to flatten the surface and remove air bubbles.
- Arrange the fruits on top of the chocolate and lightly sprinkle with coconut flakes. For a more stylish look, gather the fruits in the center.
- Chill and set in the refrigerator for about 15-30 minutes. Once completely firm, remove from the molds and garnish with mint to finish.
- Store in the refrigerator for about 1 week. Freezing is also possible for long-term storage, but be aware that the texture may change after thawing.
Nutrition and Health Benefits
The appeal of this recipe lies in its incorporation of cacao-derived polyphenols and dietary fiber, as well as coconut-derived medium-chain triglycerides (MCTs). Cacao polyphenols have antioxidant properties and are suggested to improve blood circulation, while dietary fiber helps support gut health. The MCTs found in coconut oil and butter are easily converted into energy and can help promote a feeling of fullness. Furthermore, by using oligosaccharides, erythritol, or similar as sweeteners, this recipe can help suppress rapid blood sugar spikes, making it suitable for those who want to limit sugar intake. However, coconut-derived fats are high in calories, so be mindful of overconsumption.
Arrangement Tips
- For nut lovers, chopped almonds or hazelnuts can be sprinkled to add texture (be mindful of allergies).
- If you want it creamier, adding 1-2 teaspoons of coconut milk powder will also make it delicious.
- If you prefer a more bitter taste, increase the cacao powder and reduce the sweetness to adjust the flavor.
- Utilize seasonal fruits. Mango, kiwi, and strawberries also pair perfectly.
- If you want to make it low-carb, use erythritol or stevia instead of oligosaccharide. However, adjust the amount as their sweetness characteristics differ.
Summary
Homemade coconut chocolate, when you choose your ingredients carefully, can be a simpler and safer sweet to enjoy than store-bought options. We also had fun experimenting with different fruits during our trials, and all of them turned out genuinely delicious. Its beautiful appearance also makes it perfect for entertaining. Please try making your own bite-sized chocolates with your preferred sweetness and fruits.
