This dish is perfect for keto, offering protein and good fats. Easily made in the oven, it's ideal for breakfast or lunch. The sweetness of asparagus and the tartness of berries make it a refreshing meal.

About This Recipe

This is a hearty ketogenic plate that's perfect for both breakfast and lunch. The seasoning is simple, as the saltiness of the bacon provides all the flavor you need, but the freshness of the freshly baked asparagus, the creaminess of the avocado, and the tartness of the berries keep every bite exciting. When we at geefee tried making this ourselves, it was ready in less time than we expected, making our morning routine so much easier. We highly recommend this for busy mornings or for anyone looking to be more mindful of their low-carb diet.

Ingredients (Serves 2)

  • Asparagus 6 stalks
  • Bacon slices 6 (thin slices recommended)
  • Free-range eggs 2
  • Baby leaf lettuce 1 cup (approx. 30-50g)
  • Avocado 1/2
  • Lemon 1/2
  • Blueberries appropriate amount (10-12 berries)
  • Strawberries 2-3 (cut in half)
  • Avocado oil 1 teaspoon
  • Black pepper a little (to taste)
  • Toothpicks as needed (to secure bacon if it peels off)

Instructions

  1. Preheat oven to 220°C (200-210°C for convection ovens).
  2. Snap off the tough ends of the asparagus, and if necessary, peel off the tough outer skin with a peeler.
  3. Wrap one slice of bacon diagonally around each asparagus stalk, securing the ends with a toothpick if it seems to unravel. If the bacon is thick, lightly heat it in the microwave for 20-30 seconds to prevent uneven cooking and make it easier to handle.
  4. Arrange the wrapped asparagus on a baking sheet and bake at 220°C for about 8-10 minutes. It's done when the surface is golden brown and the bacon is crispy. If it starts to burn, cover it with aluminum foil halfway through.
  5. Bring eggs to room temperature, then gently place them in boiling water and boil for about 9-10 minutes (this yields a slightly firm yolk with some softness). Once cooked, transfer to cold water and peel.
  6. Cut the avocado in half lengthwise, remove the pit, peel, and slice thinly. Cut the strawberries in half.
  7. Arr ange baby leaf lettuce on a plate, then top with the baked bacon-wrapped asparagus, sliced avocado, strawberries, blueberries, and halved eggs. Squeeze lemon juice, drizzle with avocado oil, and sprinkle with black pepper. Serve immediately.

Nutrition & Health Benefits

This plate is a low-carb, high-fat menu that perfectly fits a ketogenic diet. The bacon and eggs provide high-quality protein and fats, while the avocado is rich in monounsaturated fatty acids (oleic acid). Asparagus offers dietary fiber, folate, vitamins K and C, and is also packed with antioxidants. Berries are relatively low in carbs but help supplement vitamins and polyphenols, balancing the nutrition without compromising on flavor. Overall, it's highly satisfying and ideal for when you want to prevent rapid spikes in blood sugar levels.

Arrangement Tips

  • You can adjust salt and fat content by using prosciutto or turkey bacon instead of regular bacon.
  • If you love cheese, sprinkle a small amount of feta or Parmesan cheese on top for added richness.
  • If you want more spice, increase the amount of red pepper flakes or black pepper.
  • You can also easily make this using a grill pan or an air fryer (at 180-200°C for 6-8 minutes) instead of an oven.
  • If you want more volum e, roasted cauliflower or zucchini also pair well.
